Canning sauerkraut

I want to start by saying that sauerkraut is fermented which in and of itself is a preserving technique! Fermented sauerkraut can stay in a fridge up to a year or in a cool dark place like a root cellar! Canning fermented foods can kill some of the good live bacteria which makes fermented foods so good for your gut!

Buuut if you are like me & you don’t have a root cellar or enough fridge space to keep a bunch of jars of sauerkraut then canning (water bath) is the best way to keep these jars shelf stable & feeding your family throughout the winter!

So when in doubt - keep it fermented. Store in fridge or cold/dark place. When you can’t do those things - water bath them & put on the shelf!
