Instant Pot Short Ribs

This recipe is a comfort food that I love serving with mashed potatoes on a cold/rainy day. It is pretty hands off with it being in the instant pot & it leaves the short ribs literally melting off the bone.

Ingredients:

  • 2lb short ribs

  • 2 tbsp beef tallow (or olive oil)

  • 1 yellow onion

  • 2 tbsp tomato paste

  • 1/2 cup balsamic vinegar

  • 1 cup beef broth

  • salt & pepper to taste

  • 3 minced garlic cloves

  • 1 tsp thyme

  • 1 tsp parsley

  • 2 bay leaves

  • 2 tbsp cornstarch (or flour)

  • 1/4 cup water


Directions:

1) Cut your short ribs into smaller chunks & season with salt & pepper.

2) Turn the instant pot onto saute & add your oil. Saute the short ribs until browned on both sides. 2-3 mins on each side. Remove from the instant pot.

3) Add in the onion & garlic & saute for a couple mins. Add in the tomato paste & balsamic vinegar. Mix well.

4) Turn off the saute mode. Add in the beef broth, thyme, parsley, bay leaves, salt & pepper. Add the short ribs back into the instant pot.

5) Turn it onto high for 60 mins. Once it is done, release the steam. Remove the short ribs & remove bones & shred the meat.

6) Mix 1/4 cup of water with 2 tbsp cornstarch & mix well. Pour into the sauce mixture & mix well on saute for 3-5 mins or until the sauce is thick.

7) Add the short ribs back into the sauce & serve.
