Potato bacon soup

A fav comfort food!

This soup is a hit in our house & one of my favs on a cold snowy day!

What you’ll need:

• 5-6 large potatoes

• 6 slices of bacon

• 1 medium onion

• 3-4 garlic cloves

• 3 cups chicken broth

• 2 cups of cream (or milk)

• 1/4 cup of flour

• 3/4 cup sour cream (or mayo)

• 2 Tbsp butter

• 2 cups grated cheese

• salt & pepper to taste

• 1-2 tsp parsley

Directions:

1) Cut up your bacon into bacon bits & cook in a soup pot. Take bacon out & set aside.

2) Peel & dice your potatoes & boil until a knife goes through them.

3) Add your diced onion & crushed garlic cloves into the soup pot & cook in the leftover bacon grease.

4) Add your butter to the pot & flour. Stir well for 1-2 mins.

5) Pour in the chicken broth & cream. Bring to a boil. Stir well getting any bits off the bottom of the pot.

6) Lower the heat. Add in only half of the cooked potatoes. Add in the bacon bits. Use a hand immersion blender & blend it all together.

7) Add the remaining potatoes, grated cheese, sour cream & spices. Let it simmer for 10-20 mins & serve!
